Owner & Head Chef, Peppercorn Restaurant

At the age of 17, Charlie started his training at Danby College in Leeds and started washing pots at Headingley Cricket ground at the weekends. The buzz of the kitchen was irresistible and from there he started working as a Commis chef at a hotel in Reading. After a stint at Brockencote Hall in Herefordshire, Charlie moved back to Leeds to a Chef de Partie role at Hayley’s Hotel.

After 18 months came Charlie’s big break, a role at celebrity Chef Brian Turner’s restaurant in London. Under Turner, Charlie worked his way up from Chef de Partie to Head Chef over a 5 year period. When Charlie was Head Chef, the restaurant held 3 rosettes and was considered one of the best restaurants in London. With that experience under his belt, Charlie moved back up north working at various establishments such as Milano’s, Leopold Hotel and 543, where he met his now business partner Kelly Ware.

The couple then moved on to joint venture running The Samuel Fox Country Inn, Derbyshire where they held 2 AA rosettes, a Good Food Guide entry and a Michelin entry. When owners decided to put the building on the market, it was time for a new challenge and the opportunity to own their own restaurant, Peppercorn presented itself. Peppercorn has been running for nearly three years now and is going from strength to strength and Charlie is really enjoying the freedom that owning your own restaurant allows.
