Head Chef, Brocco Kitchen
Leslie has been Head Chef at Brocco Kitchen since it opened in 2014. With a Michelin Plate and a brace of local and national awards under his belt, Leslie specialises in modern British food with Scandinavian flavours. Last year, he introduced a small plate smorgasbord-style day-to-evening menu, which has proved very popular with diners.
Leslie was born in Sheffield and trained at the city’s Castle College. Having previously worked at Soho Hotel in London as well as a year at one of New Zealand’s leading fine dining restaurants, this Sheffielder is pleased to be pioneering the small plate way of eating back home.
Leslie knew he wanted to be a chef from a young age, any opportunity he got to be involved in the kitchen he was; he recalls wanting to master the art of the roast potato at the age of 10 and forcing his family to eat them every night for a week!
When we asked Leslie what he loved about being a chef his eyes lit up like a kid in a sweet shop and the sheer joy and passion from this chef shines through in abundance. He says “I love being a chef as it gives me the opportunity to be creative and explore new foods and flavour combinations. I love to push the boundaries and challenge myself every day. There is nothing better than foraging for the freshest produce or working on a new menu; I get a real buzz and excitement from working with humble ingredients and elevating them to something special. Sometimes with new dishes I like to hang around the dining room to see the reaction from the diners! Food brings people together and creates memories… I love it!”
